Ingredients (view qty in metric system instead)
2 cups all purpose flour 1 1/2 cups sugar 1/2 cup cold, diced butter or margarine 1 tsp. baking powder 1 cup milk 2 large eggs, separated 2 cups fresh or frozen, thawed blueberries
Directions
Preheat oven to 350 degrees. Grease a 13x9 inch baking dish. Stir together flour and sugar in a medium bowl. Cut in cold butter until crumbly. Reserve 3/4 cup crumb mixture. To remaining crumb mixture add baking powder, milk and yolks. Mix until well blended. Beat egg whites in a medium bowl to soft peaks. Fold beaten whites into the batter. Pour batter into the prepared dish. Sprinkle blueberries evenly over batter. Sprinkle reserved crumb mixture evenly over blueberries. Bake 30 to 35 minutes until cake is golden brown and a toothpick comes out clean. Transfer pan to a rack and cool completely before cutting into squares.
Makes about 1 1/2 dozen pieces.
