Ingredients (view qty in metric system instead)
2 1/4 cups all purpose flour 1 cup plus 2 tbsp. yellow cornmeal 3/4 cup sugar 4 1/2 tsp. baking powder 3 large eggs 5 tbsp. butter, melted 1 1/2 cups buttermilk 1 cup blueberries
Directions
Preheat oven to 375 degrees. Grease 24 muffin cups or line with paper cupcake liners. Stir together flour, cornmeal, sugar and baking powder in a large bowl. Stir together eggs, melted butter and buttermilk in a small bowl. Stir egg mixture into flour. Mix just until evenly moistened. Gently fold in blueberries. Fill muffin cups 3/4 full. Bake muffins 25 to 30 minutes until firm and golden. Serve warm or cool.
Makes 2 dozen muffins.
