Ingredients (view qty in metric system instead)
1 cup all purpose flour 2 tbsp. sugar 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1 large egg 1 cup buttermilk 1 tsp. vanilla extract 2 tbsp. melted butter 1 1/2 cups fresh or frozen, thawed blueberries 2 tsp. vegetable oil
Directions
Stir together flour, sugar, baking powder, baking soda and salt in a large bowl. Whisk together egg, buttermilk and vanilla in a small bowl. Stir the buttermilk mixture and the melted butter into the flour until just blended. Stir in blueberries. Heat oil on a griddle or large skillet over medium high heat. Spoon 1/3 cup batter onto the griddle for each pancake. Cook until top of pancake is bubbly. Flip pancakes over and cook until golden brown. Serve hot.
Serves 4.
