Cajun blackening spice 3 pounds ground beef chuck 1 1/2 cups crumbled bleu cheese 8 onion rolls, sliced horizontally and toasted 16 slices bacon, fried crisp and drained 2 avocados, peeled, pitted and sliced 8 lettuce leaves 8 slices red onion 8 slices tomato Directions Stir together mayonnaise, roasted pepper puree, and 1 tsp. Cajun seasoning mix in a small bowl. Form beef into 8 patties. Coat with remaining Cajun spice and grill to desired doneness. Top each burger with 2 to 3 tbsp. bleu cheese. Cook until cheese is melted. Spread cut sides of rolls with mayonnaise mixture. Place burgers on bottom halves of rolls and top each with 2 slices bacon, 4 to 5 slices avocado, lettuce, tomato and onion slice. Serve immediately. Makes 8 burgers.
