Ingredients (view qty in metric system instead)
1 cup butter-flavored solid vegetable shortening 1 cup brown sugar 1 cup granulated sugar 2 large eggs 2 tsp. vanilla extract 1 2/3 cups all purpose flour 1 tsp. baking soda 1 tsp. salt 1/2 tsp. baking powder 3 cups quick-cooking oats 6 ounces chopped white chocolate 6 ounces chopped semisweet chocolate 1/2 cup chopped candied red cherries 1/2 cup sliced almonds
Directions
Preheat oven to 375 degrees. Beat together shortening, both sugars, eggs and vanilla in a large bowl until well blended. Sift together flour, baking soda and baking powder. Stir in salt. Add to shortening mixture and mix on low speed until well blended. Stir in oats, white and semisweet chocolates, cherries and nuts. Drop by rounded tablespoonfuls 2 inches apart onto ungreased baking sheets. Bake 9 to 11 minutes until set. Cool 2 minutes on pan. Cool completely on racks.
Makes about 3 dozen cookies.
