Ingredients (view qty in metric system instead)
1 small onion, peeled and chopped 2 tbsp. canned diced jalapeno peppers 2 cloves garlic, peeled and minced 1 tbsp. vegetable oil 1 tsp. dried oregano 1/2 tsp. ground cumin 14.5 ounce can Mexican style stewed tomatoes, chopped 1/2 cup beer 8 ounces canned black beans, rinsed and drained 8 ounce can whole kernel corn, drained 1/4 tsp. salt 1/8 tsp. pepper sour cream chopped fresh cilantro leaves
Directions
Combine onion, jalapenos, garlic and oil in a large saucepan over medium high heat. Cook until onion is tender, stirring frequently. Add oregano and cumin and cook 1 minute. Stir in tomatoes with juices and beer and bring to a boil. Reduce heat and simmer 5 minutes. Add black beans, corn, salt and pepper and bring to a simmer. Simmer chili 15 to 20 minutes until chili is thickened. Divide chili between bowls and garnish with dollops of sour cream and chopped cilantro.
Serves 2 to 4.
