Ingredients (view qty in metric system instead)
Crust: 1 cup all purpose flour 1/4 tsp. salt 6 tbsp. cold diced butter 1 1/2 tbsp. solid vegetable shortening 1/8 cup ice water
Filling: 1 cup + 2 tsp. sugar 3 tbsp. cornstarch 12 ounces 7-up 2 to 3 drops red food coloring 1 pint strawberries, stemmed and quartered
Directions
For Crust: Combine the flour and salt in a food processor. Pulse in butter and shortening until mixture resembles coarse crumbs. Add water drop-by-drop until dough just comes together. Form dough into a ball and flatten into a disc. Wrap tightly in plastic wrap. Refrigerate 1 hour. Remove from refrigerator and let stand 15 minutes before rolling. Place crust into an 8 or 9 inch pie pan(recipe can be doubled to add a top crust if desired).
For Filling: Stir together 1 cup sugar, cornstarch and 7-up in a medium saucepan. Cook over medium heat until thickened. Remove from heat and cool to room temperature. Stir in food coloring. Sprinkle strawberries with 2 tsp. sugar and place into the pie shell. Pour the cooled 7-up mixture over strawberries. Let stand 10 minutes. Serve with whipped cream.
Serves 8 to 10.
