Ingredients   (view qty in metric system instead)
4 large beets, stemmed
1 cup orange juice
2 tbsp. sugar
2 tbsp. butter
1 tbsp. finely grated orange peel
2 tsp. red wine vinegar

Directions
Preheat oven to 400 degrees. Wrap beets in foil and bake about 60 to 75 minutes until tender. Cool beets and peel. Cut beets into wedges and transfer to a medium saucepan. Add orange juice, sugar, butter, grated orange peel and red wine vinegar. Simmer over medium heat until sauce is syrupy, stirring frequently, about 10 minutes.

Serves 4.
