Ingredients (view qty in metric system instead)
3/4 cup beer 1 cup all purpose flour 1/2 cup finely chopped fresh parsley leaves 3/4 tsp. salt 12 ounces peeled onion, cut into 1/2 inch thick slices vegetable oil for frying
Directions
Whisk together beer and flour in a large bowl until smooth. Whisk in parsley. Let batter stand 30 minutes at room temperature. Stir in salt. Separate onion slices into rings. Heat oil in a fryer or large deep skillet to 375 degrees. Dip 5 to 6 onion rings in batter, allowing excess to drip off. Fry rings about 1 to 2 minutes until golden, turning to fry both sides. Drain fried rings on paper towels. Repeat battering and frying in batches with remaining onion rings.
Serves 2 to 4.
