Ingredients (view qty in metric system instead)
Salsa: 1 tsp. kosher salt 6 medium tomatoes, cored, seeded and chopped 1 cup seeded, diced red bell pepper 3 tbsp. drained, chopped canned jalapeno peppers 1 cup diced red onion 2 green onions, thinly sliced 1 medium clove garlic, peeled and minced 2 tbsp. chopped fresh parsley leaves 1/4 tsp. pepper 1 tsp. lime juice
Shrimp: 12 ounce bottle beer 1 tbsp. shrimp boil spices 2 pounds large fresh shrimp, shelled(tails left on) and deveined
Directions
For Salsa: Place tomatoes and salt in a strainer and toss gently. Let tomatoes drain 10 minutes. Stir together bell pepper, jalapenos, red onion, green onions, garlic, parsley, pepper and lime juice in a medium bowl. Stir in tomatoes. Let salsa stand 30 to 60 minutes at room temperature.
For Shrimp: Combine beer and shrimp boil in the bottom of a steamer or large saucepan. Place a rack into the pan and heat beer to a boil. Place shrimp on the rack. Cover the steamer or pan tightly and steam shrimp about 2 minutes per side until just pink. Transfer shrimp to a large bowl. Drain salsa and stir into shrimp. Serve immediately.
Serves 4.
