Ingredients (view qty in metric system instead)
1/4 tsp. caraway seed 2 cups dark beer 1 tsp. whole black peppercorns 1 bay leaf 1 medium onion, diced 1 medium carrot, diced 1 to 2 pound boneless pork loin
Directions
Combine caraway seed, beer, peppercorns, bay leaf, onion and carrot in a medium saucepan. Heat over low heat until warm. Place pork in a shallow baking dish and pour beer mixture over. Cover and refrigerate pork at least 6 hours or overnight.
Preheat oven to 375 degrees. Remove pork from the marinade and transfer to a baking pan. Roast pork 30 to 40 minutes until pork reaches 160 degrees. Let pork stand 5 minutes before slicing and serving.
Serves 2 to 4.
