Ingredients (view qty in metric system instead)
1 pound ground beef 1 large clove garlic, peeled and minced 1 tsp. dried thyme 1/4 tsp. salt 1/4 tsp. pepper 1 3/4 cups prepared German potato salad 14 ounce can diced tomatoes, drained 1 cup shredded Swiss cheese, divided
Directions
Preheat oven to 350 degrees. Cook beef with garlic and thyme in a large skillet over medium heat, about 8 to 10 minutes, until beef is browned, stirring frequently. Drain fat. Stir in salt, pepper, German potato salad and tomatoes. Cook about 7 minutes, stirring frequently, until mixture is thickened. Stir in 1/2 cup Swiss cheese. Transfer mixture to an ungreased 8 cup baking dish. Sprinkle remaining 1/2 cup Swiss cheese evenly over casserole. Bake 15 to 20 minutes until casserole is heated through and bubbly. Let casserole stand 5 minutes before serving.
Serves 4 to 6.
