Ingredients (view qty in metric system instead)
Beef: 2 pound beef round steak, cut into 1 1/2 inch cubes 2 large onions, peeled and sliced 3 tbsp. curry powder or to taste 1 can beef broth plus additional if needed 1 cup dry red wine 2 cups sour cream 2 tbsp. grated horseradish, drained 1 tsp. salt 1/4 tsp. pepper
Rice: 2 cups long grain white rice 4 cups cold water 2 tsp. salt 2 tbsp. butter
Directions
For Beef: Combine the beef cubes, onions, curry powder, 1 can broth and wine in a large pot. Bring to a boil over medium heat, stirring frequently. Cover the pot and reduce heat to medium low. Simmer beef 1 1/2 to 2 hours until meat is tender, stirring occasionally(if liquid gets below 1 inch in depth add additional broth). Remove the pot from the heat and stir in horseradish, sour cream, salt and pepper.
For Rice: Combine the rice, water, salt and butter in a large saucepan. Bring to a boil over medium high heat, stirring frequently. Cover the pan tightly and reduce heat to medium low. Let rice simmer about 12 to 14 minutes until the liquid is absorbed and rice is tender but not mushy.
Divide the rice between plates, spoon the beef curry over and serve.
Serves 6 to 8.
