Ingredients (view qty in metric system instead)
1 tbsp. canola oil 2 1/2-3 1/2 pound boneless beef brisket 1/2 cup chopped onion 1/2 cup water 3 cups carrots sliced 1/4 inch thick 1/4 cup packed brown sugar 1 tbsp. fresh lemon juice 1 tsp. salt 1/2 tsp. ground cinnamon 1/2 tsp. pepper
Directions
Heat oil in a dutch oven until hot. Brown brisket on both sides and reserve. Pour off drippings. Add onions to pan and cook, stirring, 5 minutes or until tender. Add water. Add brisket to pan and bring to a boil. Cover and simmer 2 1/4 hours. Add carrots, brown sugar, lemon juice, salt, cinnamon and pepper. Cover and cook 30 to 45 minutes until brisket is very tender. Slice brisket and serve with carrots and sauce.
Serves 8 to 10.
