Ingredients (view qty in metric system instead)
3 pounds beef pot roast 2 tsp. salt 1/2 tsp. pepper 3 tbsp. solid vegetable shortening 1/2 cup plus1 tbsp. water 8 ounce can tomato sauce 2 medium onions, peeled and diced 2 cloves peeled garlic, minced 2 tbsp. brown sugar 1/4 tsp. paprika 1/2 tsp. dry mustard 1/4 cup lemon juice 1/4 cup ketchup 1/4 cup white vinegar 1 tbsp. worcestershire sauce 2 tbsp. all purpose flour
Directions
Season pot roast with salt and pepper. Melt shortening in a Dutch oven over medium-high heat. Add pot roast and brown on all sides. Stir together 1/2 cup water, tomato sauce, onions and garlic in a small bowl. Pour mixture over roast. Reduce heat, cover and simmer roast 90 minutes. Stir together brown sugar, paprika, dry mustard, lemon juice, ketchup, vinegar and worcestershire in a small bowl. Pour mixture over roast. Cover and continue simmering 1 hour. Transfer roast to a cutting board. Skim fat from pan juices. Stir together remaining 1 tbsp. water and flour in a small bowl until smooth. Heat pan juices to a boil and stir in flour mixture. Cook, stirring, until thickened. Slice pot roast and serve with sauce.
