Ingredients (view qty in metric system instead)
1 pound shelled fresh lima beans 4 ounces bacon, diced 1 medium onion, peeled and chopped 1 medium green bell pepper, stemmed, seeded and chopped 15 ounce can tomato sauce 14.5 ounce can stewed tomatoes 1 tsp. salt 1/2 cup grated Monterey Jack cheese
Directions
Place lima beans in a large saucepan with water to cover. Heat to a boil, skimming foam off the surface. Reduce heat and simmer about 25 minutes until beans are tender, adding more water if needed. Drain beans well. Meanwhile, place the bacon in a large skillet and cook 10 minutes over medium low heat, stirring occasionally. Add onion and green pepper and cook about 10 minutes until tender, stirring frequently. Add lima beans and cook 5 minutes, stirring frequently. Add tomato sauce and stewed tomatoes. Cover and simmer 15 minutes. Uncover the skillet and simmer an additional 20 minutes until most of the liquid is asbsorbed, stirring frequently. Stir in salt. Grease the inside of a deep casserole dish. Pour the bean mixture into the prepared dish. Preheat oven to 450 degrees. Sprinkle the Monterey Jack evenly over the beans and bake about 20 minutes until the cheese is melted. Serve lima beans immediately.
Serves 8.
