Ingredients (view qty in metric system instead)
5 pounds corned beef brisket 1 medium onion, peeled and sliced 1 tbsp. pickling spice mix 1/4 cup prepared yellow mustard, divided 2 tbsp. brown sugar 1/4 tsp. ground nutmeg 1/4 tsp. pepper
Directions
Combine corned beef, onion and pickling spice in a large pot. Add water to cover and heat to a simmer. Simmer corned beef about 3 hours until tender, adding more water if necessary. Prepare grill. Brush 1/2 of the mustard all over the corned beef. Place the remaining mustard in a small bowl and stir in brown sugar, nutmeg and pepper. Place the corned beef on an oiled grill rack. Barbecue the beef 15 minutes per side. Brush corned beef all over with 1/2 of the mustard mixture and barbecue 5 minutes per side. Brush corned beef all over with the remaining mustard mixture and barbecue an additional 5 minutes per side until meat is crusted and browned. Transfer the barbecued corn beef to a cutting board. Slice corned beef across the grain and serve.
Serves 10 to 12.
