Ingredients (view qty in metric system instead)
3 tbsp. olive oil, divided 2 boneless skinless chicken breast halves 1/4 tsp. salt 1/4 tsp. pepper 1 cup diced onion 1 medium zucchini, stemmed, seeded and cubed 1 medium yellow squash, stemmed, seeded and cubed 8 ounces shredded mozzarella cheese 1/3 cup chopped fresh cilantro 10 ounce prepared pizza crust 6 tbsp. prepared barbecue sauce
Directions
Preheat oven to 450 degrees. Heat 2 tbsp. oil in a medium skillet. Season chicken with salt and pepper. Add chicken to pan and cook through, about 5 minutes per side. Dice chicken and transfer to a large bowl. Add remaining 1 tbsp. oil to skillet. Add onion and cook 2 minutes. Add zucchini and squash and cook until crisp-tender, about 5 minutes. Add vegetables to chicken in bowl and cool completely. Stir in mozzarella and cilantro. Place pizza crust on a large sheet pan. Spread barbecue sauce over crust. Sprinkle chicken and vegetables evenly over crust. Bake pizza until heated through and cheese is melted, about 15 minutes. Cut into wedges and serve hot.
Serves 4 to 6.
