Ingredients (view qty in metric system instead)
2 pounds skinned catfish fillets 1/2 cup ketchup or barbecue sauce 1/2 cup finely chopped onion 1 tbsp. minced garlic 1/4 cup water 1/8 tsp. tabasco sauce or to taste 3 tbsp. butter
Directions
Combine onion, garlic and butter in a medium saucepan. Cook until tender, stirring frequently. Add ketchup or barbecue sauce, water and tabasco. Simmer 8 to 10 minutes, stirring frequently.
Place catfish fillets in a 13x9 inch glass baking dish. Pour sauce over fish and turn to coat. Cover and refrigerate 30 minutes, turning twice. Meanwhile prepare barbecue grill. Remove fish from marinade and transfer to grill. Grill 3 to 4 inches from coals for about 4 minutes per side, basting frequently with sauce, until fish flakes easily.
Serves 4.
