Ingredients (view qty in metric system instead)
2 tsp. olive oil 2 1/2 to 3 pounds boneless beef chuck pot roast 3/4 tsp. salt 3/4 tsp. pepper 14 ounce can beef broth 2 tbsp. minced fresh garlic 1 1/2 cups prepared barbecue sauce kaiser rolls or hamburger buns, split and toasted
Directions
Heat the oil in a large pot over medium heat. Season the pot roast all over with the salt and pepper and add to the pot. Brown the roast on all sides. Add the broth and garlic and bring to a boil. Reduce the heat to medium low, cover and simmer the pot roast about 2 to 2 1/2 hours until the beef is fork tender. Transfer the pot roast to a cutting board and let stand until cool enough to handle. Meanwhile, skim the fat off the cooking liquid in the pot. Shred the pot roast and place in a large saucepan. Add the barbecue sauce and some of the cooking liquid from the pot to keep the meat moist. Cook over medium heat about 8 to 10 minutes, stirring frequently and adding more cooking liquid as necessary. Serve the barbecued beef on kaiser rolls or hamburger buns.
