Ingredients (view qty in metric system instead)
1/2 cup unsalted butter 1/4v cup chopped walnuts, toasted 1 1/2 cups mashed overripe banana 1 cup buttermilk 3/4 cup brown sugar 2 large eggs 1 2/3 cups cake flour 1 tbsp. baking powder 2 tsp. poppy seeds 1 tsp. baking soda 1/4 tsp. salt 1 tbsp. sugar 1/3 tsp. ground cinnamon
Directions
Preheat oven to 375 degrees. Line 16 muffin cups with paper cupcake liners. Melt butter in a small saucepan. Cook 5 minutes until butter is lightly browned. Cool slightly. Whisk together the butter, bananas, buttermilk, brown sugar and eggs in a large bowl. Stir together the flour, baking powder, poppy seeds, baking soda and salt in a large bowl. Stir into the banana mixture just until blended. Fold in walnuts. Spoon into prepared muffin cups, filling to top. Stir together sugar and cinnamon and sprinkle a pinch on top of each muffin. Bake muffins 18 to 20 minutes until browned. Remove muffins from oven, remove from pan and cool completely on a rack.
Makes about 16 muffins.
