Ingredients (view qty in metric system instead)
3 tbsp. melted butter 2/3 cup sugar 1/3 cup creamy peanut butter 2 large eggs 1 cup peeled, mashed ripe bananas 3 tbsp. milk 2 cups all purpose flour 1 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt 1 cup raisins 1/2 cup chopped roasted peanuts
Directions
Preheat oven to 350 degrees. Grease the inside of a 9x5 inch loaf pan. Stir together melted butter, peanut butter, sugar and eggs in a large bowl. Add mashed bananas and milk and stir until well blended. Sift together flour, baking powder and baking soda in a medium bowl. Stir in salt. Add the flour mixture to the banana batter and stir until evenly moistened. Fold in raisins and roasted peanuts. Spread the batter evenly in the prepared pan. Bake bread about 55 to 60 minutes until a toothpick comes out clean. Cool the bread in the pan for 10 minutes. Remove the loaf from the pan and transfer to a rack to cool completely.
Makes 1 loaf.
