Ingredients (view qty in metric system instead)
8 ounces peeled ripe bananas, chopped 1/2 cup plus 1 tbsp. all purpose flour 1 tbsp. baking powder 1 tbsp. sugar 1/2 tsp. salt 1/3 cup yellow cornmeal 1/4 cup milk 1 large egg 1/3 cup toasted chopped pecans vegetable oil
Directions
Combine bananas, flour, baking powder, sugar, salt, cornmeal, milk and egg in a blender. Blend until almost smooth. Transfer batter to a medium bowl and stir in pecans. Heat a griddle over medium heat. Brush griddle with vegetable oil. Pour 1/4 cupfuls of batter onto griddle. Cook until surface of pancakes is bubbly and bottoms are golden brown. Flip pancakes and cook about 1 minute until pancake is cooked through and golden brown.
Makes about 10 pancakes.
