Banana Bread: 2 cups all purpose flour 3 tsp. baking powder 1/2 tsp. salt 1/2 cup solid vegetable shortening, room temperature 1 cup sugar 2 large eggs 2 large egg yolks 2 ripe bananas, peeled and mashed 1 tsp. lemon juice 1/2 cup chopped walnuts
Batter: 4 large eggs 1 cup milk 1/2 tsp. salt 1/2 tsp. vanilla extract 1/4 cup butter. divided
Directions
For Banana Bread: Preheat oven to 375 degrees. Butter and flour a medium loaf pan. Sift together the flour and baking powder into a medium bowl. Stir in salt. Combine shortening and sugar in a large bowl. Beat until light and creamy. Add the eggs and yolks one at a time, beating after each addition. Mix in the mashed bananas and lemon juice. Add the flour mixture and blend until just combined. Stir in walnuts. Pour the batter into the prepared pan. Bake about 50 to 60 minutes until a toothpick comes out clean. Transfer the pan to a rack and cool 5 minutes. Remove the pan and cool the banana bread completely on the rack.
For the batter: Whisk together eggs, milk, salt and vanilla in a shallow pie plate. Slice cooled banana bread into 8 slices, about 3/4 inch thick. Cut each slice in half, diagonally. Preheat a griddle over medium high heat. Place half the butter on the griddle to melt. Dip half the banana bread slices in the batter to coat, allowing excess batter to drip off. Place coated banana bread on the griddle and cook about 4 minutes per side until browned. Repeat cooking with remaining butter and bread slices. Serve French toast hot.
