Ingredients (view qty in metric system instead)
Strudel Dough: 1 1/4 cups all purpose flour 1/2 cup butter or margarine, room temperature 3 large egg yolks 1 tsp. finely grated lemon peel 1 tbsp. fresh lemon juice
Walnut Filling: 3 large egg whites 1/2 cup sugar 1 cup ground walnuts powdered sugar
Directions
For Dough: Sift flour into a medium bowl. Cut in butter or margarine until coarse crumbs form. Stir together yolks, lemon peel and lemon juice in a small bowl. Stir into flour mixture with a fork until a stiff dough forms. Shape dough into 24 small balls. Place dough balls into a shallow pan. Cover and refrigerate at least 4 hours.
For Walnut Filling: Beat egg whites to soft peaks in a medium bowl. Gradually add sugar and beat to stiff peaks. Fold in walnuts.
For Strudelettes: Preheat oven to 350 degrees. Roll out each dough ball to a 4 inch round on a floured surface. Spread each dough round with 2 tbsp. walnut filling. Roll dough up jelly roll style. Place strudels seam side down on ungreased sheet pans. Bake about 15 minutes until golden. Transfer strudels to racks and cool completely. Slice each strudel diagonally into 3 pieces. Sift powdered sugar over strudel slices before serving.
Makes about 6 dozen pieces.
