Ingredients (view qty in metric system instead)
12 ounces lean ground beef 15 ounce can pinto beans, drained and rinsed 1 cup prepared salsa 4 tsp. taco seasoning eight 6 inch flour tortillas shredded lettuce diced tomatoes sour cream shredded Monterey Jack cheese
Directions
Preheat oven to 450 degrees. Cover a sheet pan with nonstick foil. Cook beef in a large skillet until browned, breaking up clumps. Drain fat from skillet. Add beans, salsa and taco seasoning and heat to a boil. Reduce heat to low and simmer 6 minutes, stirring frequently and mashing some of beans, until thickened. Spoon some of beef mixture into the center of each tortilla. Fold tortillas in half and transfer to prepared pan. Coat tacos lightly with cooking spray. Bake 8 to 10 minutes until tacos are lightly browned. Garnish tacos with lettuce, tomatoes, sour cream and Monterey Jack.
Makes 8 tacos.
