Ingredients (view qty in metric system instead)
1 cup chili sauce 1 tbsp. tomato paste 1 canned chipotle chili in adobo 2 pounds beef stew meat, cubed 1 tbsp. ground cumin 1 tsp. salt 3 tbsp. vegetable oil, divided 4 large cloves garlic, peeled and minced 2 medium onions, peeled and minced 1 cup beef broth
Directions
Preheat oven to 350 degrees. Combine chili sauce, tomato paste and chipotle in a blender. Blend until smooth. Stir together beef cubes, cumin and salt in a large bowl. Heat 1 1/2 tbsp. oil in a large cast iron skillet. Add beef and brown on all sides. Transfer beef to a medium bowl. Add remaining 1 1/2 tbsp. oil, garlic and onions to the skillet. Cook about 6 minutes, stirring occasionally, until tender. Return beef to the skillet and add chili sauce mixture and broth. Cover and bake stew about 90 minutes, stirring occasionally, until beef is tender. Serve hot.
Serves 6 to 8.
