1 cup chili sauce
1 tbsp. tomato paste
1 canned chipotle chili in adobo
2 pounds beef stew meat, cubed
1 tbsp. ground cumin
1 tsp. salt
3 tbsp. vegetable oil, divided
4 large cloves garlic, peeled and minced
2 medium onions, peeled and minced
1 cup beef broth

Directions
Preheat oven to 350 degrees. Combine chili sauce, tomato paste and chipotle in a blender. Blend until smooth. Stir together beef cubes, cumin and salt in a large bowl. Heat 1 1/2 tbsp. oil in a large cast iron skillet. Add beef and brown on all sides. Transfer beef to a medium bowl. Add remaining 1 1/2 tbsp. oil, garlic and onions to the skillet. Cook about 6 minutes, stirring occasionally, until tender. Return beef to the skillet and add chili sauce mixture and broth.
