Ingredients (view qty in metric system instead)
6 tbsp. butter 3 cloves garlic, peeled and minced 36 large raw shrimp, peeled and deveined 3/4 tsp. dried oregano 1/4 tsp. crushed red pepper flakes pinch salt 3/4 cup dry vermouth 12 ounces cored, seeded, diced tomatoes 1/3 cup Feta cheese
Directions
Melt butter in a large skillet over medium high heat. Add garlic, shrimp, oregano, pepper flakes and salt to the skillet. Cook about 3 minutes until shrimp are just pink, turning once. Transfer shrimp to a large, shallow casserole dish. Add vermouth to the skillet and boil until reduced by half, about 3 minutes. Add tomatoes and stir 30 seconds until heated through. Spoon the tomato mixture over the shrimp. Crumble Feta over. Bake 8 to 9 minutes until cheese is melted and bubbly. Serve immediately.
Serves 6.
