Baked Pork Chops with Apple Corn Bread Stuffing

4 boneless pork loin chops 1 tsp. dried thyme, divided 1/2 tsp. salt 1/2 tsp. pepper 1 1/2 tbsp. butter, divided 1/2 cup chopped onion 1/2 cup peeled, chopped Granny Smith apple 3/4 cup crushed corn bread stuffing mix 1/4 cup water
Directions
Preheat oven to 450 degrees. Coat the bottom of a 9x13 inch baking pan with cooking spray. Season pork with 1/2 tsp. thyme, salt and pepper. Melt 1/2 tbsp. butter in a large skillet over medium high heat. Add pork chops and cook about 3 minutes per side until cooked through. Transfer pork chops to the prepared baking pan. Add remaining 1 tbsp. butter, onion and apples to skillet. Cook about 5 minutes, stirring occasionally, until onion is softened. Add water, stuffing mix and remaining 1/2 tsp. thyme. Cook, stirring, about 1 minute until water is absorbed and stuffing is softened. Mound 1/4 of the stuffing mixture on top of each pork chop. Bake about 5 minutes until stuffing is crisp and starting to brown.
Serves 4.
