Ingredients (view qty in metric system instead)
24 large fresh oysters, shucked and drained 2 cups mayonnaise 1/4 cup chili sauce 2 tbsp. dijon mustard 1/2 tsp. paprika 3 dashes tabasco 1 tbsp. lemon juice 1/4 tsp. salt 1/4 tsp. pepper 2 pounds fresh spinach, blanched 1 minute in boiling water, squeezed and chopped 12 strips bacon, cooked crisp, drained and crumbled 1 cup grated parmesan
Directions
Preheat oven to 375 degrees. Grease a 2 quart shallow baking dish and fill with oysters in a single layer. Stir together mayonnaise, chili sauce, mustard, paprika, tabasco, lemon juice, salt and pepper. Spoon over oysters. Spoon spinach over and sprinkle with bacon and parmesan, covering spinach completely. Bake uncovered until cheese is bubbly and browned, approx. 12 minutes.
