Ingredients (view qty in metric system instead)
4 tbsp. butter 3 Granny Smith apples, peeled, cored and sliced into thin wedges 1 cup all purpose flour 1 cup milk 6 large eggs 1 tsp. vanilla extract 1/2 tsp. salt 1/4 tsp. ground nutmeg powdered sugar
Directions
Preheat oven to 450 degrees. Place a medium cast iron skillet in the oven. Melt 2 tbsp. butter in a separate skillet over medium high heat. Add the apple wedges and cook until crisp tender, stirring gently. Remove the skillet from the heat. Combine the flour, milk, eggs, vanilla, salt and nutmeg in a medium bowl and blend until smooth. Remove the skillet from the oven and add the remaining 2 tbsp. butter. Rotate skillet to evenly coat bottom. Arrange the cooked apples evenly in the bottom of the skillet. Pour the batter over the apples and bake 15 minutes. Reduce the oven to 375 degrees and bake pancake an additional 10 minutes. Transfer the skillet to a rack and let pancake cool 5 minutes. Cut the apple pancake into wedges, sift powdered sugar over and serve.
Serves 4 to 6.
