Ingredients (view qty in metric system instead)
5 tbsp. butter, divided 3 medium shallots, peeled and minced 3 stalks celery, chopped 8 ounces sliced fresh mushrooms 1 cup dry seasoned bread crumbs 1/2 cup slivered almonds 6 pork loin chops, about 4 to 6 ounces each
Directions
Preheat oven to 350 degrees. Coat the inside of a shallow baking dish with cooking spray. Melt 3 tbsp. butter in a large skillet over medium heat. Add shallots, celery and mushrooms and cook about 5 minutes until tender, stirring occasionally. Stir in bread crumbs and almonds until well combined. With a sharp knife, cut a horizontal pocket about 2 inches deep in the side of each chop. Stuff pork chops with the mushroom mixture. Skewer or toothpick pockets closed. Add remaining 2 tbsp. butter to the skillet and melt over medium high heat. Add stuffed pork chops and brown on both sides. Transfer chops to the prepared dish. Bake 35 to 40 minutes until chops are cooked through.
Serves 6.
