Ingredients (view qty in metric system instead)
1 pound ground turkey 1 cup chopped celery 3/4 cup chopped onion 1/2 cup chopped green bell pepper 1/2 cup peeled, chopped eggplant 2 tsp. chili powder 1/2 tsp. pepper 1/2 tsp. ground cumin 1/2 tsp. crushed red pepper flakes 15 ounce can tomato sauce 15 ounce can chili beans with juices 15 ounce can cannellini beans, drained two 8.5 ounce packages corn muffin mix 1 cup shredded Cheddar cheese sour cream
Directions
Preheat oven to 350 degrees. Grease the inside of eight 16 ounce casserole dishes. Combine ground turkey, celery, onion, bell pepper and eggplant in a large skillet. Cook over medium high heat until turkey is browned, breaking up clumps. Stir in chili powder, pepper, cumin and red pepper flakes. Cook 2 minutes, stirring constantly. Stir in tomato sauce, chili beans and cannellini beans. Cook until heated through, stirring occasionally. Meanwhile, prepare the corn muffin mix according to package directions. Divide the corn muffin batter between the prepared casserole dishes. Spoon the chili over the batter. Bake casseroles 20 minutes. Sprinkle the Cheddar over the top of the casseroles and bake an additional 10 minutes. Top with dollops of sour cream and serve.
Serves 8.
