Baked Mashed Potatoes with Crispy Potato Topping

Ingredients (view qty in metric system instead)
3 large russet potatoes 1/4 cup butter pinch ground nutmeg 1/2 tsp. salt 1/2 tsp. pepper 2 large egg yolks 1/4 cup heavy or whipping cream 2 tbsp. melted butter
Directions
Preheat oven to 400 degrees. Butter an 8x8 inch baking dish. Place potatoes on a sheet pan and bake about 1 hour until tender. Increase oven to 450 degrees. Cut potatoes in half lengthwise. Scoop out the insides of the potatoes and transfer to a medium bowl. Reserve the potato skins. Add 1/4 cup butter to the potatoes in the bowl and beat until smooth. Add nutmeg, salt, pepper and yolks and beat until combined. Beat in cream. Transfer the potato mixture to the prepared dish. Slice the reserved potato skins into strips. Place the potato strips on a sheet pan. Drizzle with the melted butter and toss well to coat. Bake about 10 minutes until crisp. Add the mashed potatoes to the oven and bake about 10 minutes until heated through. Sprinkle the crisped potato skins over the mashed potatoes and serve.
Serves 4 to 6.
