Baked Mashed Potatoes with Cheddar and Green Onions

Ingredients (view qty in metric system instead)
2 1/2 pounds russet potatoes, peeled and chopped 1/2 cup butter, diced 1/4 cup chopped green onions 1/2 tsp. salt 1/4 tsp. pepper 1 cup grated Cheddar cheese
Directions
Preheat oven to 350 degrees. Butter the inside of a 6 to 8 cup baking dish. Bring a large pot of lightly salted water to a boil. Add potatoes and boil until tender, stirring occasionally. Drain potatoes well and return to the pot. Add butter and mash potatoes. Stir in green onions, salt and pepper. Spoon the potato mixture into the prepared dish. Sprinkle the Cheddar over the potatoes. Bake about 35 minutes until potatoes are heated through and cheese is bubbly. Serve immediately.
Serves 6 to 8.
