Ingredients (view qty in metric system instead)
2 tbsp. butter 2 1/2 cups chopped fresh spinach 1/4 cup chopped fresh basil 2 tbsp. chopped fresh oregano 2 cloves garlic, peeled and minced 2 boneless, skinless chicken breast halves, about 6 to 8 ounces each 4 thin slices cooked ham 8 thin slices Provolone cheese 1 1/2 cups dry breadcrumbs 1/4 tsp. salt 1/4 tsp. pepper 1 large egg, beaten to blend
Directions
Preheat oven to 375 degrees. Grease a sheet pan. Melt butter in a medium skillet over medium heat. Add spinach, basil, oregano and garlic. Cook until softened, stirring frequently, about 5 minutes. Remove pan from the heat. Place chicken breast halves on a cutting board and flatten with a mallet. Place 1 slice ham on half of each chicken breast. Top each piece of ham with 2 overlapping slices Provolone. Spoon half of the spinach mixture onto the center of each chicken breast. Fold chicken over and secure edges with toothpicks. Stir together breadcrumbs, salt and pepper. Dip the stuffed chicken in the beaten egg, then roll in breadcrumbs to coat. Transfer breaded chicken to the prepared pan. Bake about 30 minutes until chicken is cooked through. Remove toothpicks and serve.
Serves 2.
