Ingredients (view qty in metric system instead)
1/2 cup yellow cornmeal 1/2 cup all purpose flour 1 1/2 tsp. baking powder 1/2 tsp. salt 1/2 tsp. sugar pinch cayenne pepper 1/4 cup minced onion 1 large egg 1/3 cup milk 2 tbsp. vegetable oil
Directions
Preheat oven to 425 degrees. Spray the cups of a miniature muffin pan with nonstick spray. Stir together the cornmeal, flour, baking powder, salt, sugar, cayenne and onion in a medium bowl. Whisk together the egg, milk and oil in a small bowl and add to the dry ingredients. Stir until just blended. Spoon the batter into the prepared muffin cups, filling each about 1/2 to 3/4 full. Bake the hush puppies about 15 to 20 minutes until golden. Serve immediately.
Makes about 6 hush puppies.
