Ingredients (view qty in metric system instead)
one 12 pound cooked semiboneless smoked ham whole cloves 2 tsp. finely grated orange peel 1/2 cup fresh orange juice 1/2 cup brandy 2 tbsp. currant jam 1 tbsp. dry mustard
Directions
Preheat oven to 300 degrees. Roll back rind on ham to expose fat. Score fat in a diamond pattern with a sharp knife. Insert a whole clove in the center of each diamond. Roll rind back over to cover fat. Place ham fat side up on a rack in a large roasting pan. Bake ham 1 hour. Cut off rind of ham with a sharp knife. Sprinkle ham with orange peel. Spoon orange juice over ham. Bake ham 1 hour, basting frequently. Combine brandy, jam and mustard in a blender. Blend on Low until smooth. Spoon glaze over ham and bake about 30 minutes, basting frequently, until ham is deep brown. Let ham stand 10 minutes before carving.
Serves 24. Note: If dividing this recipe for a smaller number of servings, only decrease the ham weight. Make the same amount of glaze as for 24 servings.
