1 1/2 tbsp. butter 1 medium onion, peeled and finely chopped 1 medium green bell pepper, stemmed, seeded and finely chopped 2 cloves garlic, minced 2 tsp. dried thyme 1 pound ground boiled ham 8 ounces ground turkey 8 ounces ground pork 2 large eggs, beaten to blend 1/2 cup fine dry breadcrumbs 1/4 cup milk or heavy cream 1 tbsp. dijon mustard 1/4 cup minced fresh parsley 1/4 tsp. salt 1/2 tsp. pepper
Directions
Preheat oven to 375 degrees. Butter a 9x5 inch loaf pan. Melt butter in a medium skillet. Add onions and bell pepper and cook, stirring frequently, until tender, about 10 minutes. Add garlic and thyme and cook an additional 2 minutes. Transfer to a large bowl and stir in ham, turkey, pork, eggs, breadcrumbs, milk, dijon, parsley, salt and pepper. Mix together thoroughly with your hands. Transfer mixture to the prepared pan. Form into a loaf with a rounded top. Place loaf on a sheet pan and bake 75 to 90 minutes until internal temperature reaches 165 degrees. Remove loaf from oven and pour off fat. Let stand 10 minutes before serving.
Serves 6 to 8.
