1 1/2 tbsp. butter 1 medium onion, peeled and finely chopped 1 medium green bell pepper, stemmed, seeded and finely chopped 2 cloves garlic, minced 2 tsp. dried thyme 1 pound ground boiled ham 8 ounces ground turkey 8 ounces ground pork 2 large eggs, beaten to blend 1/2 cup dry breadcrumbs 1/4 cup heavy or whipping cream 1 tbsp. dijon mustard 1/4 cup minced fresh parsley 1/4 tsp. salt 1/2 tsp. pepper
Directions
Preheat oven to 375 degrees. Lightly butter a 9x5 inch loaf pan. Melt the butter in a medium skillet. Add onion and green pepper. Partially cover skillet and cook about 10 minutes until softened. Stir in garlic and thyme and cook 2 minutes. Transfer onion mixture to a large bowl and stir in ham, turkey, pork, eggs, breadcrumbs, cream, dijon, parsley, salt and pepper. Knead the mixture with your hands until well combined. Transfer mixture to the prepared loaf pan. Pat down with your hands to form a rounded top. Bake 75 to 90 minutes until a thermometer registers 165 degrees. Pour off fat from pan. Let loaf stand 10 minutes before removing from the pan and slicing.
Serves 8 to 10.
