Baked Halibut with Red Peppers and Onion Recipe Rating: N/A

Ingredients   (view qty in metric system instead)
2 large red bell peppers, stemmed, seeded and chopped
1 medium onion, peeled and chopped
2 tbsp. olive oil
1 clove garlic, minced
4 halibut steaks, about 1 inch thick
1/4 tsp. crumbled dried thyme
1/4 tsp. pepper
1 tbsp. fresh lemon juice

Directions
Preheat oven to 400 degrees. Combine bell peppers, onion and oil in a large baking dish. Toss to coat vegetables. Bake 20 minutes, stirring occasionally, until tender. Stir in garlic. Add halibut steaks to dish and sprinkle with thyme and pepper. Spoon vegetable mixture over fish. Bake about 9 minutes until fish is cooked through. Drizzle lemon juice over.
