Ingredients (view qty in metric system instead)
1 1/2 pounds fresh or frozen thawed cod fillets 1/4 cup chopped onion 1 tbsp. fresh lemon juice 1/4 cup plus 2 tbsp. butter, divided 2 tbsp. all purpose flour 1 tsp. salt 1/2 tsp. white pepper 2 cups warm milk 1 cup shredded cheddar cheese 1/3 cup dry breadcrumbs 1/4 cup grated parmesan cheese 1/4 tsp. paprika
Directions
Preheat oven to 400 degrees. Lightly grease a 1 quart casserole dish. Place fish in prepared dish. Sprinkle with onion and lemon juice. Bake about 20 minutes until fish flakes easily. Cool slightly. Pour off juices and discard onion. Flake cod with a fork. Melt 1/4 cup butter in a medium saucepan over medium heat. Stir in flour, salt and pepper. Cook 2 minutes, stirring, until slightly thickened. Gradually add milk. Cook, whisking, about 10 minutes until thickened and smooth. Add cheddar and cook 2 to 3 minutes until melted. Stir in fish. Return mixture to casserole dish and spread evenly. Reduce oven to 375 degrees. Melt 2 tbsp. butter in a medium skillet. Add breadcrumbs, parmesan and paprika and cook 1 minute, stirring. Sprinkle mixture over casserole. Bake until topping is golden brown and casserole is heated through, 20 to 30 minutes. Serve hot.
