12 ounce can frozen orange juice concentrate, thawed 1/2 cup ketchup 1/4 cup lemon juice 2 tbsp. soy sauce 2 tbsp. melted butter 1 tsp. ground allspice 1/2 tsp. garlic powder 1/4 tsp. ground ginger 1/4 tsp. salt 1/4 tsp. pepper 6 boneless, skinless chicken breast halves, about 6 to 8 ounces each 11 ounce can mandarin orange sections, drained 3 ripe bananas, peeled and quartered
Directions
Stir together orange juice concentrate, ketchup, lemon juice, soy sauce, melted butter, allspice, garlic powder, ginger, salt and pepper in a medium bowl. Place the chicken breasts in a 9x13 inch baking dish. Pour the orange juice mixture over the chicken. Turn chicken to coat. Cover and refrigerate chicken 2 to 3 hours.
Preheat oven to 350 degrees. Uncover chicken and bake 30 minutes. Sprinkle the mandarin orange sections and bananas over the chicken. Bake an additional 30 minutes, basting several times. Preheat broiler. Broil the chicken 2 to 3 minutes until glazed. Divide chicken between plates. Skim off the fat from the pan juices. Spoon juices over the chicken and serve.
Serves 6.
