Ingredients (view qty in metric system instead)
1/4 cup olive oil 4 boneless, skinless chicken breast halves, about 6 to 8 ounces each 7 ounce can whole green chilies, cut into strips 1 cup heavy or whipping cream 1 tbsp. chopped fresh parsley leaves 1 tsp. pepper 1/2 tsp. salt 1/2 cup grated Swiss cheese
Directions
preheat oven to 325 degrees. Heat oil in a large skillet over medium high heat. Add chicken and cook about 1 minute per side until lightly browned. Transfer chicken to a 9x13 inch baking dish. Sprinkle chilies over top of chicken. Whisk together cream, parsley, salt and pepper in a medium bowl. Pour cream mixture over chicken. Sprinkle with Swiss cheese. Bake about 45 minutes, basting occasionally with pan juices, until chicken is tender and cooked through. Serve immediately.
Serves 4.
