Baked Cheddar Cheese Potatoes with Sour Cream

Ingredients (view qty in metric system instead)
6 medium russet potatoes 2 1/2 cups grated sharp Cheddar cheese 1/4 cup butter 1 cup sour cream, room temperature 1/3 cup minced onion 1/2 tsp. salt 1/2 tsp. pepper paprika
Directions
Boil potatoes in a large pot with water to cover until tender. Drain potatoes well and let stand until cool enough to handle. Peel potatoes and shred into a large bowl. Preheat oven to 350 degrees. Butter an 8 inch square baking dish. Combine 2 cups Cheddar and butter in a small saucepan. Cook, stirring, over low heat until almost melted. Remove pan from the heat and stir in sour cream, onion, salt and pepper. Fold Cheddar mixture into the shredded potatoes. Pour mixture into the prepared dish. Sprinkle the remaining 1/2 cup Cheddar over. Sprinkle with paprika. Bake about 30 minutes until bubbly. Let stand a couple minutes before serving.
Serves 6.
