Baked Catfish Fillets with Mashed Potato Crust

Ingredients (view qty in metric system instead)
1 cup prepared mashed potatoes, chilled 2 green onions, chopped 1 tsp. dried thyme 1 tsp. finely grated lemon peel 1/4 tsp. salt 1/4 tsp. pepper 2 catfish fillets, about 5 to 6 ounces each 1 tsp. lemon juice 2 tsp. butter 1/2 cup soft, fresh breadcrumbs
Directions
Preheat oven to 450 degrees. Line a small sheet pan with foil. Grease foil. Stir together mashed potatoes, green onions, thyme, lemon peel, salt and pepper in a medium bowl until well blended. Place catfish fillets on the prepared pan. Drizzle lemon juice over fish. Spread the mashed potato mixture over each fish fillet, covering completely. Melt butter in a small skillet. Add breadcrumbs and stir until coated. Spoon crumbs over the mashed potato crust, pressing lightly to adhere. Bake catfish about 20 minutes until mashed potatoes are crusty and fish is cooked through. Serve immediately.
Serves 2.
