10 cups freshly popped popcorn 2 cups whole almonds 1 1/4 cups brown sugar 1/4 cup butter 1/4 cup light corn syrup 2 tsp. vanilla extract 1/2 tsp. almond extract 1/4 tsp. salt 1/4 tsp. baking soda
Directions
Preheat oven to 250 degrees. Butter a large baking pan. Stir together popcorn and almonds in the prepared pan. Place the pan in the oven. Combine brown sugar, butter and corn syrup in a medium saucepan. Cook, stirring, over medium heat until sugar is dissolved. Increase heat to high and boil mixture until it reaches 255 degrees on a candy thermometer. Remove the pan from the heat and stir in vanilla, almond extract, salt and baking soda. Pour the syrup over the popcorn and stir gently to coat. Bake popcorn about 80 minutes, stirring frequently, until caramel is dry. Loosen the popcorn with a spatula and cool completely.
Makes about 10 cups popcorn.
