Ingredients (view qty in metric system instead)
4 to 4 1/2 pounds beef brisket 18 ounce bottle prepared barbecue sauce 1 cup ginger ale 1 envelope dry onion soup mix 1/2 tsp. pepper 2 cloves garlic, minced 2 pounds potatoes, quartered 6 medium carrots, peeled and chopped 2 medium onions, peeled and cut into wedges 2 tbsp. chopped fresh parsley
Directions
Preheat oven to 325 degrees. Place meat in a large shallow roasting pan. Stir together barbecue sauce, ginger ale, soup mix, pepper and garlic in a medium bowl. Pour over brisket. Cover pan with foil and bake 2 hours, turning once. Arrange potatoes, carrots and onions around meat. Cover and bake about 90 minutes until meat and vegetables are tender. Transfer brisket to a platter and slice. Arrange vegetables around meat and spoon pan juices over. Sprinkle with parsley and serve.
Serves 8 to 10.
