Ingredients (view qty in metric system instead)
2 tbsp. olive oil 1 large onion, peeled and chopped 5 tsp. chili powder 1 1/2 tsp. dry mustard 2 cups water two 15 ounce cans cannelini beans, drained and rinsed 14 1/2 ounce can stewed tomatoes with juices 3 tbsp. light molasses 1/4 tsp. salt 1/4 tsp. pepper
Directions
Heat oil in a large saucepan. Add onion and cook about 8 minutes until softened. Add chili powder and mustard and cook, stirring, 1 minute. Add water, beans, tomatoes with juices and molasses. Simmer 15 minutes, stirring occasionally and breaking up tomatoes. Season with salt and pepper. Transfer 1 cup beans to a food processor. Puree. Return to soup and simmer 3 minutes.
Serves 2 to 4.
