Ingredients (view qty in metric system instead)
2 1/2 to 3 pounds fresh or frozen, thawed whole salmon, cleaned 1/4 cup dry white wine 1/4 cup olive oil 1/2 tbsp. lime juice 1/8 tsp. dried dillweed 1/8 tsp. dried marjoram 1 large apple, cored and diced 1 1/2 tbsp. butter 2 cups wheat bread cubes 1/4 cup sunflower kernels 1 medium egg, beaten to blend 1/4 tsp. ground sage 1/2 tsp. salt 1/4 tsp. pepper
Directions
Combine wine, olive oil, lime juice, dill and marjoram in a small bowl. Place the salmon on a sheet pan. Brush the inside of the salmon with some of the wine mixture. Pour the remaining wine mixture over the salmon. Let stand 15 to 20 minutes. Meanwhile, melt the butter in a medium saucepan over medium heat. Add apple and cook about 3 minutes, stirring frequently, until just tender. Stir in the bread cubes, sunflower kernels, half the egg, sage, salt and pepper. Preheat oven to 350 degrees. Remove salmon from the marinade. Stuff the salmon cavity loosely with the apple mixture. Place salmon in a large baking pan. Cover pan with foil. Bake salmon about 30 to 45 minutes until just cooked through. Serve immediately.
